Apple Cinnamon Muffins | Super moist muffins stuffed with apple and cinnamon goodness.
Ok, so I have a very serious question to ask you guys… is it possible that I’ve started nesting already? I’m only 4 months into my pregnancy, but I think I’m already starting to nest. I spent literally my entire day in the kitchen yesterday, cooking and baking up a storm.
I made two different kinds of applesauce (this one I shared with you guys last week and crockpot cinnamon version that I’ll share soon), two caramel apple pies (recipe for that also coming soon), chicken taco meat and oven-baked brown rice for burrito bowls (so the hubby and I have something to eat for lunches this week instead of sandwiches), two pans of chicken enchiladas, and these apple cinnamon muffins. Let me tell you, I was exhausted by the end of the day!
But I just couldn’t stop myself. For one, Peter went to the Packer game with his cousins yesterday, so I had the house to myself. And instead of cleaning (like I should have been doing), I decided to spend the day in the kitchen. Because when you have the house to yourself for an entire day, you should spend it doing something you enjoy, like binge-watching The Office on Netflix or taking a bubble bath or whatever it is you do when you finally have some peace and quiet and time to yourself.
Also, I still had a basically full bushel of apples to use up from our trip to the orchard last weekend, and those things weren’t going away without me putting in some serious time in the kitchen. Peter bought me this all-in-one peeler/corer/slicer thing that is basically a gift from the gods, as far as I’m concerned. It easily cut my prep time in half and helped me avoid those weird hand cramps you get when you hold a vegetable peeler for way too long (does that only happen to me?).
These apple cinnamon muffins are super delish and a piece of cake to make. I’m not a huge muffin person, except for those chocolate chocolate chip muffins that are basically like eating a candy bar disguised as a breakfast food. But every once in a while, I get a hankering for apple cinnamon muffins, and these muffins definitely satisfied that craving.
The thing I loved about them, besides the fact that they are super moist, is the fact that there are no actual chunks of apples in them. The apple is shredded for these muffins as opposed to diced so the muffins still taste delicately appley (is that a word? Appley? Spell check is telling me that it’s not a word but I think it is so I’m using it anyway. So there) without having to bite into a big hunk of apple.
But maybe you like apple chunks in your muffins? Fine then, dice away! But just know that deep down, I think you’re a monster (I’m kidding, obviously. Kind of. But not really). My point is, regardless of how you get the apples in the muffins (cough cough, shred them, cough), just make these muffins ok? Your breakfast-eating future self will thank you.
Apple Cinnamon Muffins
Servings: 12 muffins
- 1 1/2 cups flour
- 1 tbsp baking powder
- 1 1/2 tsp cinnamon
- 3/4 tsp ground nutmeg
- 3/4 tsp salt
- 3/4 cup grated apple (1 large apple, grated)
- 3/4 cup milk
- 1/3 cup sugar
- 6 tbsp butter, melted
- 3 eggs
- 3/4 tsp vanilla
- Preheat oven to 350. Line a muffin tin with paper liners and set aside.
- In a medium-sized bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a small bowl, whisk together grate apple, milk, sugar, melted butter, eggs, and vanilla. Pour mixture over dry ingredients and stir until just mixed together.
- Divide batter evenly among muffin cups, filling each about 2/3 full. Bake 15-16 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Let muffins cool in the muffin tin for 5 minutes, then transfer to a wire rack to finish cooling. Store in an airtight container.
