Slow Cooker BBQ Pulled Pork Sandwiches | A super simple recipe for sandwiches stuffed with incredibly tender pulled pork slathered in tangy barbecue sauce
Um, do you guys realize that Thanksgiving is next week? NEXT WEEK PEOPLE! Where the hell did this year go? Isn’t it funny how the older you get, the faster the years seem to go? But then when you think back on something that happened six months ago or the beginning of the year or even (gasp!) last year, it seems like it happened so long ago.
Peter and I talk about this all the time. Over the weekend, we went to see the movie Inferno which is the third movie in the Da Vinci Code series. These movies are based on the books written by Dan Brown, and I’ve loved all of them (there’s four so far, in case you’re wondering. But I just found out a fifth book is due to be released next fall, which I’m sure WILL BE HERE BEFORE I KNOW IT).
Anyway, this movie is set mainly in Florence and Venice, which is where Peter and I spent our honeymoon last year (we also spent time in Rome). And it was so much fun to see all these places in the movie that we had seen in person. It got me all kinds of nostalgic. I think I ended up liking the movie just because of that (I didn’t particularly like the movie, by the way. It was an ok movie, but they changed the ending from the one in the book, which I had totally loved. So that just soured my opinion of the movie as a whole).
After a busy Saturday, we spent the day yesterday getting stuff done around the house. I finally got our bathrooms cleaned and the kitchen counters disinfected and I actually even dusted, which is a minor miracle in and of itself. Then we had our friend Matt over to marvel at our newly mounted living room television and to watch the Packer game.
Speaking of the Packers… ugh. That’s all I can even say about them aymore. Just UGH. They’re painful to watch. Seriously, how much more must we endure before some heads start rolling? Peter’s been calling for Mike McCarthy’s firing for forever, and now he’s starting to throw in everyone in the organization. Fire Dom Capers! Fire Ted Thompson! Hell, fire everyone and just start completely fresh! He’s had it, and quite frankly, so has the rest of Packer Nation, I think. You hear that Mark Murphy? WE HAVE HAD ENOUGH! GET YOUR SHIT TOGETHER!
The only bright spot in the Packer game was that we had these amazing BBQ pulled pork sandwiches for lunch during halftime.
I had found a pork rib roast hanging out in the back of my spare freezer (not my deep freezer, mind you. My other freezer. No, not the one that’s attached to the refrigerator in my kitchen. The other one that’s attached to the other refrigerator in the garage. Yes, I have three freezers. No, I still don’t think I have enough freezer space. Yes, I am a crazy person). And I decided that BBQ pulled pork sandwiches were just what we needed for lunch yesterday.
This recipe almost couldn’t be any easier. Usually when I make a big hunk of meat in the crockpot, I like to sear it on the stove first, just because I love those crispy bits of seared meat. But yesterday, I was lazy. And I didn’t want to soil my newly disinfected kitchen, so I skipped that step. And if I’m being honest, I didn’t even really miss the crunchy bits.
All you need to do is toss some seasonings on the meat, pour on some chicken stock, BBQ sauce, and a few other assorted ingredients (that you most likely have sitting in your fridge or pantry anyway), and turn the crockpot on. See what I mean? SO EASY! A few hours later, you have some fork-tender pork that is heaven on a hamburger bun. My husband added a little extra BBQ sauce to his sandwich, but honestly, I thought the meat was delicious all on it’s own.
I mean, I still added a slice of cheese to my sandwich. I’m from Wisconsin after all. Let’s be real here.
Slow Cooker BBQ Pulled Pork Sandwiches
Servings: 5 -6 sandwiches
For the meat:
- 1 (2 lb) pork roast, trimmed of fat (I used a rib roast)
- Kosher salt
- Ground black pepper
- Garlic powder
- 1 cup chicken stock
- 1 cup BBQ sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- 2 tsp steak sauce (I use A1)
- 3 cloves garlic, minced
- 5-6 hamburger buns
- 5-6 cheese slices (optional)
- Additional BBQ sauce (optional)
- Generously season all sides of the pork roast with coarse ground salt, pepper, paprika, and garlic powder, pressing seasonings into the meat. Place roast in slow cooker.
- In a small bowl, whisk together chicken stock, BBQ sauce, Worcestershire sauce, brown sugar, steak sauce, and garlic. Pour over pork roast. Cover slow cooker and cook on low for 5 hours.
- Carefully remove pork roast from slow cooker to a cutting board. Shred using 2 forks, discarding any fatty pieces.
- Divide meat among hamburger buns. Top each sandwich with 1 slice of cheese and additional BBQ sauce (if desired).
